Our Matcha French Toast Recipe – A Brunch Favourite with a Japanese Twist 

Bring a touch of calm elegance to your morning with this Matcha French Toast – a fusion of soft brioche, fragrant vanilla, and the gentle bitterness of high-quality matcha. Beautiful to look at and even better to eat, it's the perfect start to a slow, thoughtful day.


Ingredients:
4 thick slices of brioche toast
250 ml of milk
2 tsp premium matcha powder
2 eggs
1 vanilla pod
1 tsp butter or ghee for frying
A pinch of matcha for dusting
Maple syrup or honey (optional)
Fresh berries or seasonal fruit (optional) 


Method:

Gently warm the milk in a small saucepan. Split the vanilla pod lengthwise, scrape out the seeds, and add both seeds and pod to the milk. Just before it begins to boil, remove from the heat and let it infuse for a few minutes. Discard the pod. Whisk the matcha powder into the warm vanilla milk until smooth and free of lumps. Add the eggs and combine thoroughly. Pour the mixture into a shallow dish. Dip each slice of brioche into the matcha mixture for about 10–15 seconds per side, allowing it to soak up the liquid without becoming soggy.


To Finish:

Melt a little butter or ghee in a non-stick pan over medium heat. Carefully place the soaked brioche slices into the pan and cook for 2–3 minutes on each side, until golden brown. Serve warm on a plate, dusted lightly with matcha. For extra indulgence, drizzle with maple syrup or honey and add a handful of fresh berries or fruit
