The perfect caffè crema should have a firm stand and be hazelnut brown.

 

The difference between espresso and mocha cups

 

The difference between mocha and espresso mainly lies in the processing of the coffee beans and the production of the coffee. Espresso beans are roasted longer and are therefore less acidic. The strong taste is created by the pressure of the espresso machine. Mocha is brewed without pressure and cooked in the Turkish way.

One of the differences is the capacity of the cups. Up to 50 ml is usual for an espresso. The ristretto, the shortened version of the espresso, has 15 ml of liquid - accordingly, the small Tinkalu espresso cups with 60 ml are the appropriate ones. For a double espresso, the volume is 70 to 100 ml and for a mocha, around 80 to 90 ml of water is usual.
